Change cheese and mayo to make meal vegan
Salsa Mayo:
4 tbsp salsa
3 tbsp mayo
Pour ingredients into bowl and mix until well combined.
Nachos:
½ bag lightly salted tortillas
30g light cheddar
Layer tortilla chips with cheddar in a glass bowl and grill until all cheese has melted.
Quesadillas:
1 pepper
1 onion
6 cherry tomatoes
8 closed cup mushrooms
½ bag of baby spinach
30g light cheddar
1 tbsp garlic olive oil
4 gluten free multigrain wraps
1 tspn hot chilli powder (optional)
Chop all vegetables finely and fry in nonstick pan until golden brown. In another nonstick pan heat oil and press wrap, add equal amounts of the vegetables, sprinkle cheese and add salsa mayo. Fold once and press with spatula, flip and press again until golden brown. Serve.
